It was an incredible success, and now I am fast approaching my 2 year anniversary as a clean eater! I hope that you will find inspiration here, and a renewed sense that YOU CAN DO IT!Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.comBlogger31125tag:blogger.com,1999:blog-1155994893833212357.post-23836664696579461482013-08-28T11:19:00.000-07:002013-08-28T11:19:16.024-07:00One Hour, FIVE delicious Salads!With a new school year just around the corner, I'm realizing that my calm, easy morning routine is about to explode! No longer will I have time to sip my morning green juice while I surf pinterest for dinner recipes... and certainly no time to make my lunch for the day! I find that the most challenging part of sticking with my healthy eating lifestyle is planning. If I zip home for lunch without a plan - and with limited time, I'm likely going to make a less than healthy choice, simply out of convenience. That is why I make jar salads for the work week! One mess, one hour, FIVE delicious, healthy, fresh salads!

I've documented my process here for those of you who are visual (like me!)

Step one: Prep any and all potential salad ingredients! You could pull some good salad recipes and be very methodical about your salad creations. I'm more of a "wing it" gal. I've prepped a good variety of typical salad ingredients, and not so typical ingredients.

GREENS! Romaine (organic!) is very receptive to "salads in a jar". This method of preserving will keep your greens very green and fresh and crisp! To make 5 salads, I chop up 3 heads of Romaine. I also use about 3 cups of baby spinach (also organic!) I toss these all together to rinse and then I spin them in my salad spinner to reduce the moisture.

The Usual Suspects:
Cucumber
Onion,
Mushrooms,
Peppers
Tomato

The not-so usual Suspects:
Black Beans
Garbanzo Beans
Roasted Red Peppers
Artichoke hearts
Hearts of Palm
Corn
Quinoa
Sprouts
Nuts and seeds
Fruit! (ALL kinds!)

I eat a plant based diet, so you won't find cheese or eggs in my salads. But if those are in your plan, go for it!

DRESSING! The nice thing about jar salads is that you can incorporate your dressing without risk of your greens getting soggy. The trick is putting the dressing in first - in the bottom of the jar. I used to use bottled dressings, but I've found so many amazing recipes that I now make all of my own dressings! Most of mine are oil free - but occasionally I'll use a little olive or grapeseed oil. My FAVORITE is just tossing a couple of tomatoes into my blender with a handful of basil. Zip it up and you're done! I also tend to use fruit in place of dressing. Watermelon is my FAVORITE! Although, tomatoes and mango blended together are amazing!!! (who knew?!)

Assembly:
Like I said, I'm a "wing it" gal, so I pour some dressing in the bottom of the jars and then I just start building. A little of this... a little of that. OH! How about a Southwestern Salad for this jar :) Yes, please! Some beans, corn, roasted red peppers, cilantro .... When you're satisfied with your ingredients, start shoving in the greens. I stuff them as tight as I can! (I like a BIG salad!)

Seal them up!:
To get a seal that allows you to make salads 5-7 days ahead of when you're going to eat them, you really need access to a food saver. You'll also need a special attachment that goes over the mouth of the jar. http://www.amazon.com/FoodSaver-T03-0006-02P-Regular-Mouth-Jar-Sealer/dp/B000UQ428A/ref=sr_1_3?ie=UTF8&qid=1377711469&sr=8-3&keywords=food+saver+mason+jar+sealer

Put the flat canning jar lid over the mouth of the jar (make sure the rim is clean and dry). Slide (more like shove!) the attachment over the top and then vacuum the air out. You'll be able to see the liquid at the bottom bubbling up a little bit.

When the vacuum stops, pull the sealer off and screw on your threaded jar top.
Voila! Salad in a jar!

EAT IT!!! When you're ready to eat, just pop open a jar (you'll need to pry the vacuum sealed lid off), and dump the contents into a bowl. You'll need a larger bowl than you think! You stuffed a lot of delicious goodness into that jar. Once freed from the jar, you'll see that it is the perfectly assembled salad, with the lettuce on the bottom, then the myriad of other ingredients, topped with dressing. If I want fruit or avocado on my salad, I add it now - rather than include it in the jar. (I don't want the perfect flavor of the fruit mixing too much with the rest of the salad ingredients.. And avocados just don't last long once you open them up.)

That's it! Super easy - and so convenient. You will LOVE the freedom you feel at lunch time when all you have to do is open the jar and dig your fork into your beautiful luscious salad!!

Enjoy!!
Are you getting the picture yet?? Today
is DAY 50!! It seems like DAY 50 would be a great day to celebrate!
Instead, I find myself needing to push the reset button. As I've mentioned in
recent posts, I've been recently plagued with temptations that sadly, I've
succumbed to. <span style="color: purple; font-family: "Minya Nouvelle"; font-size: 14.0pt;">Before you lose all respect for me, you should know that I have not stopped
juicing! I'm still juicing daily and consuming 1 to 1.5 gallons of fresh,
wonderful juice each day! BUT... to that, I've added food (when tempted)
- which is really not acceptable on a juice feast.

I knew that 92 days was a huge goal. I
knew that it would not be easy. But I have felt very strong from the
beginning that it is an achievable goal.
I still believe that it is! I'm super disappointed in my lack of
stick-to-it-ness recently. On top of this disappointment, I've finally
come to terms with the sad fact that I cannot run in the 1/2 marathon next
weekend. I've been training since December - but after messing up my back
2 months ago, I just can't get it back to normal. I've continued to try
to run, but then end up back at the Chiro. I'm very sad about this as
well. So Day 50 is truly a disappointing day for me. :(

But God
is SO good! He sent me a
perfectly timed message today via a blog that I subscribe to: Here is
what it had to say today:

<span data-ft="{"tn":"K"}"><span style="color: #6b2a76; font-family: "Leelawadee","sans-serif"; font-size: 13.0pt; mso-bidi-font-weight: bold;">There is this funny concept out there that many have
somehow internalized. The notion that we have to do things perfectly, or they
aren't worth doing. The idea that if we make one mistake, we've messed up so
badly we should just throw in the towel. <span style="color: #6b2a76; font-family: "Leelawadee","sans-serif"; font-size: 13.0pt; mso-bidi-font-weight: bold;">

DAY 40 today! It feels great to be at this point in the feast. But I have a confession to make before I go any further....(yes... another one!)

I've had some cheatin' moments! I don't know why!!! Ever since my little detour in Chicago, I've been struggling to be perfect. (YES! It IS ok to strive for perfection!) A handful of popcorn here... a taste of the dinner I'm making for the family there... I'm very frustrated with myself for not having rock solid discipline. Especially since I truly don't want to put anything in my body except for juice right now. And yet... indiscretions keep finding me!

In the beginning (first 4 weeks) I was going strong on sheer excitement and passion! I've read that in the last 1/3 of the journey, I'll be a rock star - knowing the end is near! But this middle section of the journey... TOUGH! So I guess this is where I reach out for some help. HELP! Pray for me! Shoot me an accountability message once in a while if you think of it! I sincerely, desperately want my final 53 days to be wholly successful! Help me tame my cheatin' heart!

Happy News!! I've been talking with a co-worker of mine (and precious friend!) about my juice feast. She is really struggling with her own health. Scopes... tests... pain....and no understanding of why. I encouraged her to try juicing for 30 days - to give her digestive system a chance to rest and heal. Today she told me that she is ready! And she is EXCITED! Tomorrow I'm taking all of my supplies to work, along with bunch of produce, to teach her how to juice. I have no doubt that she is going to feel like a new woman 30 days from now! So, while I'm clearly not perfect, I feel great that others are seeing the benefits of this whole foods lifestyle!

More good news... My darling daughter is back on the wagon! If you recall, she did the first week full on with me. At the end, she transitioned back to whole foods. (sort of!) And now, she wants back in on juicing. Her plan is to juice all day, and then enjoy a whole foods dinner. She's on day 4 and doing great. I think this is a VERY DOABLE plan for many people! How convenient to drink a quick juice before work, and then enjoy a juice lunch during a busy day! All that goodness, knowing that a lovely dinner awaits. Smart girl!

SUMMER is fast approaching! (On the calendar, anyway) I am longing for my garden! We're moving it to a new spot in the yard this year because we're also putting in a pool. I'm anxious to see how it all pans out! Did you know that Swiss Chard is a perennial plant? Its growing in my garden right now - and I haven't planted any since last spring! I'm learning so much... :)

So - as I close for the day, one more plea for your support! I covet your prayers and encouragement! NO MORE TASTING! Juice power!!

Blessings!Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com0tag:blogger.com,1999:blog-1155994893833212357.post-90528081626341079762013-04-08T20:43:00.001-07:002013-04-08T20:43:22.640-07:00DAY 32 of 92! One Third of the Way There!Last week was a challenging week on the Feast! That 2 day break in Chicago lent itself to many cravings this week. It took a great deal of focus to make it through! But here I am - on day 32! It feels good to be 1/3 of the way done. But it feels even better to know that I still have 60 days worth of exciting body/life changes still ahead of me! I feel a great sense of resolve to continue to the end!

Here are some things I'm noticing so far:

My skin looks more alive - less dull! (Others have noticed this too and mentioned it!)
I've lost 12 lbs this month. (I won't weigh in again until day 60)
My stomach feels flat and light. When I ate last weekend, I immediately felt bloated! I also woke up Monday morning with a huge headache and puffy fingers.

As I've been studying about detoxification, I've come to realize that our bodies are completely inundated with toxins all day long. Before we even leave the house in the morning, women apply approximately 300 toxic chemicals to our bodies/hair through our personal care routines. I know that there is no way to completely eliminate toxic intake in our current environment, but I'm working really hard to remove toxins via juicing, dry body brushing, enemas, etc... And then - I turn around and use shampoo and conditioner, make up, and acrylic nails! Yikes! So I've decided that phase 2 of this feast I'm going to focus on eliminating "those" types of toxins. I've already removed my acrylic nails. What a mess! I am certain that restoring their health is going to take many months! But that's ok -- it will just be one more measuring stick for healing!

Now you're wondering... "how is she planning to eliminate shampoo and conditioner!?" Great question! More and more people are going "poo-free"! The substitution is baking soda (instead of shampoo) and Apple Cider Vinegar (instead of conditioner). **Side note** About 2 months ago, after reading an article about the hazards of hair care products, I decided to reduce my wash/condition routine to about 2 times per week. The result is that my hair is noticeably shinier and very soft and silky. Not oily! Not smelly! So In my mind, ditching the products is the next logical step for me. Here are a few additional reasons you might consider it for yourself:

1. Chemicals in shampoo are simply hazardous to your health.
2. Chemicals in shampoo can irritate and dry out your scalp and hair.
3.
Your body produces oil to naturally condition your hair and keep it
healthy. Using shampoo daily upsets the natural balance and causes you
to produce more oil than necessary to compensate.
4. Hair care products are expensive!

I've read that when you stop
using shampoo and begin using BS and ACV, you will probably experience a transitional period while
your body gradually adjusts to produce just enough oil to keep your hair
healthy. During this time, which can range from a few days to a month or so, you may have some extra oil than you're use to. Although, many people report that they see immediate positive changes with zero negative side effects.

I would be remiss if I didn't also take a minute to tell you about a wonderful documentary that I watched on Friday. I found it on Netflix and it's called "Hungry for Change". http://www.hungryforchange.tv/ This is a very practical documentary which outlines WHY it's difficult for us to lose weight; what effect sugar has on our bodies; how food is manufactured specifically with addictive chemicals so that we'll keep eating it; and most importantly, what to do about it.
I was so pleased with it's down to earth, easy to follow format that Sunday, I begged my family to watch it with me. Reluctantly, they did. They (Ryan!) made sarcastic jokes and comments all the way through it. But about an hour later, he told me he is on board. No more processed food or sugar. No more fast food! My daughter and son (though teenagers, and still prone to enjoy junky treats on occassion) have been on board for a while. When I told Sophie what dad said, she responded "Good! It'll be so much easier if we're all on board!" FOR SURE! Only my college student refuses to comply. Good think he's only home on the weekends.

Over the course of my 18 month journey, I've watched a number of excellent documentaries on this subject. Following is a list, for your reference. I was able to watch all of these on either Netflix or Amazon.

Fat, Sick & Nearly Dead
Food Inc.
The Gerson Miracle
Food Matters
Forks over Knives
King Corn
The Engine 2 Kitchen Rescue (Presented by Forks over Knives)

I feel like I'm forgetting one... I'll keep thinking! These are ALL worth your time!

I can't believe how many recipes are out there for juice concoctions! Yes, many of them are similar. Nonetheless, I'm finding no shortage of variety! I have discovered that I LOVE pineapple in my green drinks! I'm trying to really focus on drinking mostly green (with just a tad of fruit to sweeten it up) every day - allowing just one totally fruity drink.

My Daily Routine: Generally, I start my day with 1 quart of warm lemon water. This causes the liver to force out toxins! Then, within the same hour, I have my green juice made up of a pound of dark leafy greens, 1 bunch of celery, 1 cucumber, 1/3 pineapple. I also like to add some parsley or cilantro, as they are especially good for detoxing. I take 3 quarts of juice to work with me. One fruity juice (the possibilities are limitless!). I drink it mid morning. In the early afternoon, I drink a quart of green juice. It's just recently that I've started taking a thrid quart of juice to work. Actually, it's my dinner juice. But I take it to work so that I can drink it on my way home. I follow it with at least a liter of water. This is a strategy I've developed to help me come home and prepare dinner for my family without feeling so tempted to nibble. (Yes, I have to stop cooking and pee repeatedly!!) I feel very full by the time I get home, AND I've fed my body the nutrients it needs to ward off cravings. Very useful strategy! There is one exception with when I drink my fruity juice. If I'm going to run, I wait and drink it about 15 minutes prior. It provides a surge of energy with helps fuel my body for running!
Tonight at Barnes and Noble I picked up a little treasure called 100 Foods to Stay Young. Guess what!? You don't need to buy it, because I'm going to start featuring one food in each blog post! Our special guest today is...... CUCUMBER!

Cucumber is actually a squash, long used for it's cooling effects, inside and outside the body, reducing inflammation and speeding repair for young-looking skin!
As well as drinking fluids directly, we need to receive water from the plant foods we eat. The high water content of cucumber makes it a hydrating food that prevents dryness and wrinkling of the skin, as well as helping to remove the toxins that can age us.

Cucumber is rich in potassium, magnesium and fiber, so works to reduce high blood pressure by balancing the fluid in the body.

* Source of silica, a trace mineral needed for a healthy complexion. (I'm in!)
* Cucumber juice is known to alleviate the symptoms of rheumatic conditions and keep joints healthy and young.
* Contains the trace mineral molybdenum, which is needed to keep bones and teeth strong and healthy. (That's right - you don't need the body secretions of another species to accomplish this!)

Cucumber Juice Recipe
1/2 cucumber
2 apples
1 cup fresh cilantro (leaves and stems)

If you don't have a juicer yet, just throw these in a blender and drink it as a smoothie instead!

I realize this was a long post! Thanks for hanging in there!

Sweet dreams, friends!
But then I realized that there is no shame in being human. I am 23 days into a juice feast. Few people are able to do that. And I still have 70 days to go! I am not superhuman! Period.

This weekend, I went to Chicago for a getaway with my husband.

(Here we are! I'm sporting my new Ann Taylor sunglasses! Came with a SASSY case!) GORGEOUS, SUNNY WEEKEND in the Windy City!

I scoped out juice bars before we left. I planned how I could successfully stay on tract with my feast. I COULD HAVE juiced while I was there for a mere 24 hours. EASY. But when I talked to my husband about it, (and a few friends) I realized that it would be a drag for him to sit and eat alone while I sip lemon water at unique Chicago restaurants. He is supportive! No doubt! And it's not like I'll never get back to Chicago. We plan to go again next month, in fact. But I made a conscious decision to eat in Chicago. Sensibly. (I almost stuck to that "sensibly" part! If it weren't for that damn Garrett's Popcorn!!)

Saturday morning, we had breakfast at West Egg. I had a veggie egg white omelet. I did not finish it. I was VERY AFRAID of being in pain, after not eating for 21 days! Fortunately, I felt fine after. About 6 hours later, hunger set in for Ryan. My hunger signals have been asleep since about day 5 of my feast. So I was not hungry. BUT, I knew we wouldn't be eating again until around 9:00 pm, after seeing a theater production. So we went to an Armenian restaurant across the street from our hotel. I ordered a sampler platter which turned out to be tiny! (That was a GOOD thing!) I had red cabbage marinated in lemon; two grape leaves filled with rice, dates and humus; and about 6 spoonfuls of white bean and veggie soup. It was a very small and sensible meal. Things I would totally eat in my every day, clean eating life.

After seeing the AMAZING show, Million Dollar Quartet, we went to Ditkas for dinner. (As in... Mike Ditka). It was a classy joint! I had a delicious romaine salad followed by Mahi Mahi. I was stuffed after the salad and only ate a smidge of the Mahi Mahi. It was lovely restaurant and I felt privileged to be able to go there and enjoy an unique dining experience with my love. (Did I mention there was wine?!? I'm counting it as fruit juice!)

This morning was our final eating adventure. Today is Easter, and the GRAND LUX CAFE has a FABULOUS menu! We were the second party to enter at 9am. We got the best seat in the house! The corner window overlooking Michigan Ave and Ontario. (A great opportunity for people/fashion watching!) I enjoyed another eggwhite omelet, filled with asparagus, avocado, onions and mushrooms. Yum!

THE END.

Back to juicing for the next 70 days. We stopped at Meijer on our way home and bought everything I need for the week. I do not consider my juicing efforts to this point lost or wasted. I refuse to feel guilty. I've juiced for TWENTY ONE DAYS WITH NO CHEATING! I'm telling you this story so that you don't feel like you could never do this. Molly is not perfect. Molly is HUMAN! JUST LIKE YOU! My two goals in telling my story via this blog are 1) To inspire you. 2) To hold myself accountable. I want you to know that YOU CAN DO THIS TOO! And it's ok to not be perfect!

Best part of the weekend (aside from thoroughly enjoying time with the love of my life!) is that I SHOPPED!! A LOT! And I bought SIZE SMALL IN EVERYTHING!!! (I hope you are happy dancing for me right now! THIS IS HUGE!) I was 185 lbs just 17 months ago when I began my Clean Eating Quest. I am now 133 and dropping. I bought 4 adorable, classic, somewhat vintage style summer dresses and several blouses. I tried on size small skirts THAT FIT. It was SO MUCH FUN!!!! I can't beging to describe how great it felt to walk into Ann Taylor's Loft and have to ask for smalls off the high racks. It DOES pay to make wise food choices!

So... that's it. Full disclosure. Judge me if you'd like - it makes no difference to me. I'm 100% committed to this goal. AND, at the same time, I'm human, flesh and blood.

Thanks for allowing me to be transparent. :)

Easter Blessings to you! HE IS RISEN!!!
I know this will be 100% worth it in the end! (Just 71 more days!) I think the sunshine today has been helpful. I've been so cold for the past 4 months! And drinking cold juice all day doesn't help. I do enjoy warm tea (decaf) and warm water with lemon on occasion, but I really just need some warm weather to arrive!

I've decided I don't care for any type of pepper in my drinks. Not red, green, yellow, or orange! I've tried them all. Just not diggin' it in my juice. I've gotten in a bit of a rut with my green drinks. Time to get adventurous and try something new! My morning juice routine has become... routine. And that's good in some ways! It's easy and I don't have to think about it. But it's getting a little bit boring.

Watermelon and Strawberry juice was on the menu yesterday. Yummy! There is very little pulp involved. When I strain it through my milk bag, there is almost nothing left in there when I'm done. I like that! It means I'm getting my money's worth!

I read an article on juicefeasting.com this week regarding the sun. REALLY interesting (and intriguing) information!

Sunlight and Sunbathing

Steve Arlin, in Raw Power! writes: A common myth is that the
sun causes skin cancer. The sun doesn’t cause skin cancer, the sun
causes all life on Earth! Skin cancer is caused by toxicity within the
body. When this toxicity is detoxified through the skin (our largest
eliminative organ), it is sometimes “baked” onto the skin, bringing
forth a cancer condition. Blaming the sun for skin cancer is like
blaming fresh air for lung cancer.

You must have internal protection from the sun’s rays in the form of
proper, natural, raw-food nutrition. External “protection” like
sunscreen is an abomination. The same internal mechanism that keeps a
plant from burning up under the hot sun can keep you from sunburning. A
plant is in direct sunlight for hours upon hours every day of its
existence. A plant dries up and dies when it no longer has the internal
protection that it requires. The second best protection from sunburn
is knowing when to retreat to shade for a rest.

David Wolfe nicely summarizes some of the health benefits of sun in The Sunfood Diet Success System:

Sunlight lowers
blood sugar. It is a natural insulin. A diet high in sweet fruit must
also be accompanied by Sunshine on the skin to help metabolize the
sugar. Sunlight helps to store the sugar as glycogen in the liver,
muscles, and cells for later use.

Exposing the skin to the Sun stimulates the capillaries and brings more
blood to the skin surface. This helps to heal cuts, bruises, and rashes.
In World War II it was discovered that exposing abrasions, open wounds,
and broken bones to direct Sunlight led to quicker healing.

Fungus is destroyed by direct Sunlight. Candida cannot survive in direct
Sunlight. I have worked with numerous people with candida. The first
step to overcoming candida is Sunlight on the naked body (reference
Lesson 13: How To Use The Sunfood Triangle, Eating To Overcome Candida).

Sunlight increases the strength of digestion. Sunlight increases the
body's internal "fire." In Chinese oriental medicine we find the concept
of yin-yang balance and we see that "cold" raw foods may be balanced
with hot Sun energy.

Sunlight improves the eyesight and regulates the hormones. Occasionally
bringing direct Sunlight into the eyes just for a brief moment,
unmitigated by glasses, windows, or filters, will help balance the
body's hormones.

I read something similar last summer when I was eating 100% raw. (I was reading the 80/10/10 Diet. GREAT book!) I made an effort to be out in the sun more with no sunscreen. My husband was unhappy with this! He kept telling me I was going to get cancer and I was setting a bad example for our kids. That's a logical response. It's what's been preached to us again and again. But this article makes some sense to me. I think I'll continue to research this...
I thought that by now some of those cravings would go away - but they seem to be increasing. I have to admit I've had a few "licks" of things. Nothing bad -- a lick of salsa and a taste (or two) of guacamole! But I know that's a dangerous path to go down, so I've vowed not to do it again! My mind has been preoccupied with food the past few days. It probably doesn't help that I've been spending time on Pinterest - where recipes abound!

I know that the key for me will be to keep learning! I'm very thankful for juicefeasting.com! There is an incredible abundance of information to keep my mind going in the right direction. Also, blogging helps. Knowing that people are watching me keeps me accountable. I created a little countdown calendar that hangs on my fridge. (Visual aides really help me!) Every morning I cross out the previous day so that I can see clearly how far I've come and how far I have to go. Looking at it right now is rather daunting - as I'm still in the early stages! I have 76 days to go. That seems like a long time - but I'm trying to remember that 76 days AGO it was the beginning of January, when I was anxiously setting new goals for the year. That seems like it was just yesterday! So I know that this time will go quickly and June 8th will be here before I know it.(I'll just keep telling myself that!)

I'm sure I've mentioned that I am training for a 1/2 marathon right now, which will happen on May 2nd. Four weeks ago I messed up my back shoveling and have not been able to train at all! I've missed 4 weeks of my training. After seeking advice from a good friend (and cross country maniac!), I jumped right back in to the schedule where I should be - not where I left off. On Saturday, I ran 8 miles. I wasn't sure how that would go - especially considering my juice feast. I know that I'm fueling my body with the most nutrient dense foods possible, but making sure I'm drinking enough to sustain distance running is the key. So I loaded up! Just before my run, I drank about 12 oz of pure orange juice. Then I filled my water bottle with fresh orange/grapefruit/apple juice, mixed with a little water, and I set out. I live in town, so my strategy was to head out into the country for an 8 mile loop, rather than looping multiple times around town. I knew that if I did that, it would be too easy to quit and go home. But heading out of town meant I had no choice but to finish.

I had my musical friends from the 80's (pandora 80's cardio) playing on my ipod and I spend most of my run chanting "I can do all things through Christ who gives me strength..." over and over! It worked. He helped me get through it! I only stopped 3 times, and each time only for about 2 minutes to stretch/walk and chug some juice. I'm as slow as a snail! It took be 1:43 min to do those 8 miles. But I honestly don't care at all about my time! I just care about finishing. Next weekend, I "get" to run 9!

I made a fun purchase today! We have an island (counter) in our kitchen and it is always filled with bowls of fruit. Big bowls... several of them. Very messy looking. (I should have taken a before pix) They take up half the island and it drives my husband batty! Today we stopped by Pier 1 and I found a three tiered basket that sits on the floor. I filled it up and still have a bowl of lemons and limes on my counter! But it looks much better!

Today I've been drinking a concoction I call "Everything but the kitchen sink". Literally, I put in a little of everything. I even juiced some green beans from my garden that I flash froze in August. I pulled them out of the freezer and thawed them before juicing them. Super tasty! I also enjoyed a yummy Italy inspired drink. It was 10 roma tomatoes, a cup of basil, 1/2 clove of garlic and 1/2 bunch of celery. Very bruchetta-ish. Finally, in the evening I drank a sweet treat of blackberries, blueberries, pears and kiwi. Delicious!

So, that's where things are on day 16. I'm holding my own - but I do hope it gets easier.

Blessings!Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com0tag:blogger.com,1999:blog-1155994893833212357.post-50278359492899961642013-03-17T19:26:00.000-07:002013-03-17T19:26:11.412-07:00Day 9 of 92 - Too Many Parties!Whew! I'm glad the "holiday" weekend is over. It became more challenging as the weekend went on. After the 50's Party Friday, we gathered with our favorite friends on Saturday. FOOD. And Sunday, we had another gathering with church friends. FOOD.

These are examples of social gathering challenges. I feel like I did "ok" being in the company of great people without being totally pre-occupied with the food that was everywhere. Except for that amazing guacamole!! My good friends who hosted Saturday's party didn't know yet about my fast. But they do know that I generally eat raw vegan. They graciously prepared a huge platter of organic veggies with me in mind. Another friend brought my favorite guacamole! I felt so bad. Of course, others eat veggies too - but they were so thoughtful and I felt bad that they went out of their way for me.

Full Disclosure: I grabbed a spoon and had one bite of that guacamole! Shouldn't have done it, but it was divine!

I'm still battling a cold and a goofed up back, and lacked my usual energy today, so enjoyed a nap this afternoon.

Today I enjoyed approximately 1.5 gallons of liquid. 2 quarts of green juice, 1 quart of pineapple, watermelon, lime juice, 1 quart Master Cleanse and about 6-8 cups of water.

I'm super discouraged about my inability to run for the past THREE WEEKS!! I have a half-marathon to run on May 5th. I'm really praying that God will completely heal my back so that I can get back to my training.

There are a few supplements that are highly recommended during a juice feast. Bee Pollen is one of them. If you've read my blog back to the beginning of my quest, you may remember when I first bought Bee Pollen. I had no idea what it was or what it did, but I read I should start taking it - so I did. Generally, I dump a tablespoon or so into my morning smoothie. Here is what juicefeasting.com has to say about it:
Bee Pollen is my number one favorite superfood. There are several reasons we include pollen as part of the Juice Feast:

ONE: NUTRITION: Pollen
is said to contain all the elements necessary for the sustenance of
human life. The San Francisco Medical Research Foundation estimates
that pollen has more than 5000 different enzymes and co-enzymes, which
is more than any other food in existence. The high amount of enzymes,
such as catalase, amylase, and pectin-splitting enzymes, make pollen an
aid to digestion. Some research suggests that pollen is absorbed
directly from the stomach into the bloodstream. Pollen is a vegetarian
source of human-active B12, most of the B vitamins, vitamins A, C, D,
and E, rutin, all the essential amino acids, the essential fatty acid
called linoleic acid, fats, complex carbohydrates, simple sugars, RNA
and DNA, steroid hormone substances, a plant hormone similar to a
secretion of the human pituitary called gonadotrpin, 15% lecithin, and
many other unknown factors. According to research by doctors from
France, Italy, and the former USSR, pollen is the richest source of
protein in nature. Gram for gram, pollen contains an estimated 5-7
times more protein than meat, eggs, or cheese. The protein in pollen is
in a predigested form and therefore easy to assimilate. Pollen is also
abundant in trace minerals, such as calcium, phosphorus, magnesium,
iron, manganese, potassium, copper, silicon, sulphur choline, titanium,
and sodium. These minerals are highly assimilable because they are
bound organically from plant metabolism.

TWO: COMPASSION:
We miss chewing anything on a Juice Feast. This is one thing that you
can chew on for the entire Feast, whether it is 7 days or 92.

THREE: LIFE PRACTICE:
This is a major longevity food. By eating about 1 Tablespoon per day,
you will develop a strong positive bond with this food that will last
for a lifetime.

When buying pollen,
get it from a reputable source, organic, and preferably from a
refrigerator. It should cost no more than $12-15 a pound, and can cost
as little as $6-7 when bought from the beekeeper.

On the Juice Feast:
1 Tablespoon per day, maximum. Everyone who is new to bee pollen should
start by placing 1 pollen granule under the tongue, to check for an
allergic reaction. About 1/2 of 1 percent of the population is allergic
to pollen as a food, but please check. If you are in doubt, please
consult an allergist. Many people using pollen who have allergies during
pollen season find a partial or complete resolution of their allergies
by combining a plant-based diet and eating bee pollen as a life
practice.

I'll be honest and tell you that I don't enjoy the taste of Bee Pollen, though many people do. Instead of chewing it, I grind it in my coffee bean grinder until it is a powder and then measure a tablespoon of powder into my juice.

Today I begin day 8 of my 92 day JUICE FEAST! Aside from a little cold that I developed on Thursday, I am feeling great! I'm not sure what to attribute the cold too. I think I'm gonna blame it on detox, as I cannot imagine the nutrient dense foods I'm drinking letting a virus in! Although, the first weeks of a juice cleanse are said to be very focused on eliminating toxins. In order to do this, the body takes the energy that would normally be used for digestion and uses it instead to draw out and eliminate toxic matter from the body. This will be happening until the last day of the feast, certainly. But there is an increased work load in the beginning. So, perhaps that is how this cold sneaked in! I'm not an expert... just guessing.

I read an interesting article last night on "greens" and their healing power. We all know that greens are the best thing we can put in our bodies. Even those who refuse to eat them would likely agree. But check out this chart, borrowed from Dr. Joel Furman's book, Eat to Live. We have a very high rate of heart
disease in the U.S., and
we eat very little plant matter. Is there a connection between our
processed diet and high rates of heart disease and cancer? It seems obvious.

This is why my juice feast includes a minimum of 2 pounds of juiced greens every day.

I've also discovered Master Cleanse Juice this week. This is a simple concoction that can replace one quart of fruit juice during the feast, or, can just be added and consumed as much as desired. I just went ahead and made a gallon of Master Cleanse and keep in in my fridge. You may already be aware of the cleansing power of lemon - which is why I start every day with a class of warm lemon water (a practice I began more than a year ago). Master Cleanse also include raw organic honey and cayenne pepper. Here is the recipe:

The Master Cleanser is a simple recipe: For 1 Quart:

6-8 Tablespoons Fresh Lemon Juice
6-8 Tablespoons Raw Honey or Agave Nectar (Light Amber)
1/10th tsp 90,000 Heat Unit Cayenne Pepper

This is a great drink to make on the go, or for traveling/busy schedule
during any cleanse. I call this my "I didn't have time to make juice"
juice. It is also excellent for removing mucus from the body, reducing inflammation, and healing the digestive system.

If you have a chance, so some research on the nutritional (systemic) benefits of cayenne pepper. Incredible information! You'll notice with your first sip that the honey is important to offset the bite of the pepper! Of course, raw honey can certainly hold it's own on the "nutritional benefit" scale.

In terms of detox, the only symptom that comes around on occasion is that headache. Any hunger that I might have experienced the first few days (which was minimal, as this is a feast of abundance!) has gone. My digestive system seems to have gone to sleep - which is important for cleansing! This is one reason why a feast like this is recommended for people who suffer from intestinal disease, such as chrones or colitis, or even IBS. Juices allows the digestive system to rest and heal. Healing will come quickly when you're taking in nutrient dense juices with anti-inflamatory properties.

Ok - now for the real, practical stuff. Yes - food still looks and smells good. But I'm craving nothing. Last night I was faced with several "challenges". I was at a 50's Diner party where a catering company served up big, juicy burgers, fries and ice cream sundaes. I haven't eaten a burger (or any meat) in about a year. But when they put the tray of lettuce, tomato and RED ONION on the table, my senses woke up and took me back to burgers on our grill in the summer as a kid. Fortunately, I was on the planning committee for the event, so I was able to keep busy - which was my excuse for not sitting and eating. Later, I went to the movies with the family. I don't even have to say it. You know. POPCORN! But here's the thing - I never once thought about it. My husband and son sat right next to me eating it and after the movie, I realize that my mind was not consumed with it. That is huge progress for me! Normally I wouldn't have been able to even focus on the movie because my brain would have been pre-occupied with the big bowl of popcorn next to me. Victory!

My juices these past few days have been delicious! I'm even beginning to develop a taste for beets - which have never been my favorite.
Today will be a busy Saturday and I'll be on the go a lot! So I better get in the kitchen and start juicing! OH! I almost forgot! My beloved VITAMIX was returned to me last night, beautiful and perfect! I'm so thankful to the wonderful Vitamix company for being so quick and efficient! I shipped my blender to them last Friday and it came back to me exactly 1 week later, repaired for free, including a brand new pitcher, and shipped both ways for free.
And DANG they were good! Such a change from yesterday's less than appetizing choices. Of course, trying them out is the only way I'll know what I like and what I don't.

I spent about an hour in the kitchen this morning preparing the day's juice. Seems like a long time - but I didn't have to spend any time on lunch or dinner. And when I was hungry, my juice was dutifully waiting for me! (I think it was even smiling at me!) So I've decided it was, and will continue to be time well spent!

Because these were so delicious, I must share the recipes!

For breakfast, Sophie and I had Cappu-Green (as opposed to Cappu-cino)!
1 bunch kale
1 bunch parsely
3 huge hand fulls spinach
1 bunch celery
2 apples
1 whole lemon (with peel)
6 carrots
a smidge of ginger (remember... I decided yesterday that it's not my favorite!)
2 cucumbers

This was super satisfying and it made 3 quarts! So it was breakfast for both Sophie and me, and dinner for me!

Lunch was Gazpacho Juice (SOOOO yummy!)

5 campari tomatoes (any tomato will do fine!)
1 cucumber
2 stalks celery
1 red pepper
1/4 small red onion
1 bunch parsley
1 whole lime (with peel)

Felt like I was at an Italian restaurant - without the bread and pasta! ( I know... that's where I just lost most of you! :)

Finally, my mid-afternoon treat was a pint of Tropical Bliss! (All that was missing was the vodka!)

1 1/2 cups pineapple
1 orange
1/2 cup coconut water

I have felt good today! That pesky headache is back this evening, but it's tolerable. My biggest gripe is my back. It "went out" 2 1/2 weeks ago. Which means I haven't run in 2 1/2 weeks :( I've been to the Chiro 10 times in the past 12 days. It was the 9th time (this past Friday) that they finally took xrays, figured out the problem and adjusted me to correct it. It was like magic! It has been better and better the past couple days. Today, I decided to go get one last adjustment -just for good measure. I should have left well enough alone - because now it hurts again. Not like "I just got adjusted" pain; but more like "crud! It's kind of messed up again!" pain. :( Ugh! So I'll likely be back again tomorrow. And my 1/2 marathon training continues to patiently wait for me.

This evening I'm on the couch watching LOST with my honey. (Season 1, episode 2 - in case you were wondering) Naturally, I'm craving popcorn! It's that time of night. I'm confident that my popcorn craving will cease eventually.

Overall, I'm feeling great and so happy to be on this journey!
Still, I fell asleep quickly and slept well. But I was stunned when I woke up and it was still there. I noticed it before I even opened my eyes.

I quick drank a quart of warm lemon water and then took a shower, using the Hot/Cold shower method - which is designed to aide the detox process. Here's how it goes:

HOT shower 5-7 minutes
I've never done this before today - but I think it was beneficial! My headache was gone within about 20 minutes. (It did return for a little while early this evening, but it only visited - it didn't stay long)

(My daughter's, too.) I didn't write down my concoctions, as I was in a hurry and thought I'd remember. (Mental clarity has not arrived yet, I guess!) But I can tell you this... it wasn't my favorite day of juicing ever. I was ok with my morning green juice, which I can tell you included Rainbow Chard & Parsley (lots of it!) as my greens. There was also cucumber and celery, of course. And I'm sure an apple... I sucked it down just fine, but later this morning when my daughter finally dragged her bootie out of bed, she texted this to me: "I am literally drinking the earth right now". I cracked up! I guess it wasn't her favorite either. It was harsh! I don't think I like that much ginger! But I was already at work when I discovered this. Things are going quite well so far. My 16 year old daughter has joined me (for 2 weeks), which is quite fun for me! (Makes me think maybe my family has been learning something over the past year and 1/2 - despite their resolute stance to continue to eat as they please.)

Today I've enjoyed:

1 QT Basic Green Juice ( 1 lb spinach, 1 lb kale, 1 bunch celery hearts, 1 cucumber, 1 apple, 1/2 c. coconut juice)

2 C herbal decaf tea

2 C Basic Green Juice

1 QT Peach Pie Juice (YUM!) (3 sweet potatoes, 4 peaches, 2 apples, cinnamon)

2 C Mango juice mixed with coconut water, 1 juiced lime and 1 tsp bee pollen

1 QT Master Cleanser (28 oz water, 5 T lemon juice, 5T raw-local honey, tiny dash cayenne pepper) I warmed it slightly as a soothing night time concoction.

That equals 4 qts, 2 cups of liquid. (1 gallon, 2 cups)

After church and a quick stop at the Natural Health Center, I came home and have virtually done nothing since. And I've LOVED it! A very chill day for me! The past couple of months have included very busy weekends. (I love to be busy!) But it sure was nice to lay in bed like a lazy butt and watch 2 movies back to back, while intermittently reading juicing blogs on my ipad. Ahhh....
I've known for years (since preparing for my first juice fast) that many people really suffer from the process of detoxification which comes with a juice fast/feast. I have really never experienced those symptoms. But I've warned my daughter that it could happen. Symptoms include flu like symptoms, headaches (sometimes from giving up caffeine), listlessness/lack of energy. But those who push through the first few days generally see those symptoms pass. It helps tremendously to cleanse the toxins from the body via enemas at home. I won't dwell on that topic - for now. But know that it is easy and extremely beneficial!

I learned something today while vegging in bed with my good friend FX (channel) -- there are a LOT of commercials about food! I'd say 3 out of 5 easily. As I watched one of the commercials for an Italian restaurant, I wondered if the desire to eat those things would ever completely go away. I know beyond the shadow of a doubt that white pasta with creamy, heavy dairy laden sauce is NOT good for my body. And still, I know how wonderful it tastes! I've managed to avoid such things (mostly!) since my quest began. But the question is... will I ever completely lose the desire? I guess time will tell.

My one complete and total addiction is POPCORN! Popped in a pan on my own stove in coconut oil with a little sea salt. OH MY! When I say addiction, I am not exaggerating. This is something that I've eaten (with my family) almost daily for many, many years. Since childhood, really! And I don't eat a little - I eat a huge bowl! In addition to LOVING it, it also serves as that mindless crunching that we seem to need in the evening when we're chilling out. The GREAT NEWS is that popcorn cooked in coconut oil is a very healthy snack! But not every day. That is far too much fat - even healthy fat- for a body. It will surely be the thing I struggle with the most during this feast. (Only 90 days to go! lol!) My hope is that this feast will cure my addiction (this and many others) so that when I return to a plant based whole foods diet this summer, I'll be able to keep the popcorn treat to a couple times each week. :) **As I was just proof reading this paragraph, my son yelled from the kitchen "Popcorn anyone?" Lord help me!

I'll sign off now- as tomorrow is my first work day on the fast - which means I need to get up quite early to prepare juice for two of us for the day!

Blessings!Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com0tag:blogger.com,1999:blog-1155994893833212357.post-69840577799182776222013-03-09T13:15:00.000-08:002013-03-09T13:15:12.865-08:00Here She Goes Again! 92 Days of Juice Feasting!Those who know me know that I am a doer. When an idea inspires me, I'm off and running. I don't spend time thinking and pondering and contemplating.... I just go! I also have a tendency to tell people about it. Knowing that people are "watching" me is a great accountability measure. I attribute much of the success of my Clean Eating Quest (Oct 19, 2011 - October 19, 2012) to just letting people know that I was doing it.

Now that I've planted that little seed, let's talk about juicing. I currently juice a couple of times each week, just for variety in my diet. Mostly, my diet consists of green fruit smoothies, huge, satisfying salads and some nuts and seeds. Early on in my healthful pursuit, someone asked me if I was into juicing. The answer was no. Up to that point, the research I'd done wagged it's finger at juicing, shouting "too much sugar!! You need fiber!" So I stuck to whole foods, smoothies loaded with nutrients and fiber and juice just occasionally. Since then (17 months ago), I've learned a tad more - and my perspective has changed. Fruit and whole fruit juice are not the devil. While they do have a heavy sugar content, it is natural sugar. Therefore, my body knows exactly how to process it and use it.

I've done juice fasts before. Several years ago, I did a 30 day fast. Though, at that time, it had nothing to do with my physical health. Rather, my spiritual life. Just prior to Christmas this year, I did a 10 day juice fast - this time for health! I wanted to reboot my system and eradicate any and all cravings and addictions that were tempting me - particularly because Christmas (the season of endless eating!) was coming.

While I make wise food choices that vast majority of the time, I am human! So there is an occasional taste of this, or indulgence in that. It's amazing how fast addictions and cravings can return when you open the door - even just a crack.

Unfortunately, my 10 day juice fast before Christmas didn't have the lasting effect I'd hoped it would. The cravings and temptations still popped up now and again, so I moved on - back to my mostly raw vegan lifestyle and my occasional indulgences. Three months later, I'm really feeling the need for a total system reboot! A new goal! A new challenge! (Because training for my first 1/2 marathon isn't enough...)

Juice Feasting is done for varied lengths of time; 2 weeks, 1 month, 60 days.... I'm shooting for a 92 day juice feast. (juicefeasting.com) Feasting on fresh, juiced fruits and veggies for 92 days has the power to regenerate every cell in my body and release toxins that have been stored up since elementary school. A feast of this length is not common, but it has been highly researched and achieved by many. After devouring every bit of information I could from juicefeasting.com and rebootwithjoe.com, I've decided to go for it. Today, March 9, 2013, is DAY 1 !!

I am not expecting this to be easy. But like my first quest, I have no doubt that it will be worth it! I am not the same girl that I was 17 months ago. I will, do doubt, be different once again in on June 8th, when my feast reaches completion.

Certainly one of the greatest struggles will be the constant presence of food in my environment. I hoped my family would agree to not eat for the next 3 months, but they declined - as did my friends and co-workers. Darn. But I see that as a simple issue of resolve - as it was when I gave up sugar, bread and all processed food. There are, however, a few specific "obstacles" that are in the forefront of my mind.

1. Cost. YES! This will be costly. But I am willing to give up other things for a while in order to complete this task. It will be worth it!

2. Social Situations. This won't be a problem for ME - but it tends to be a problem for others. They "just feel so bad for me" - not being able to eat with them. Trust me when I say, I don't consider this to be a sacrifice. I can go out with friends and enjoy a cup of tea or glass of water while they eat. It's no big deal. I've been EATING (and eating and eating and eating) for 41 years. I'm pretty sure I'm not going to miss any once-in-a-lifetime eating opportunities over the next 92 days. :)

3. Time. I'm going to have to start getting up earlier. Ugh!

One thing I'm NOT concerned about: Being hungry. This is a juice FEAST! If I'm hungry, I'll simply drink more! :)

Here is how you can help me, if you're so inclined. Pray for me! Ask me how it's going once in a while. Be my cheerleader. :)

I'm hoping to blog regularly over the next 92 days. I'd love to promise that I'll blog every day, but it's just not realistic. I'll do my best to stay current.

Thanks, in advance, for your support!
I immediately conquered my first three objectives. I cut out sugar and processed foods cold turkey! It wasn’t nearly as hard as I’d
imagined. I focused on eating foods in
their most natural form. I really
focused on getting my mind trained for this QUEST. I knew I wouldn’t be happy munching on celery
and carrots for a year! I needed to
learn what else was out there that was good for me, that I could learn how to
prepare. (As a result, I now regularly
consume hemp seed, quinoa, coconut oil, bee pollen.) I hoped that the more I learned, the less
desire I’d have to eat crap. Friends,
THAT was the key to my success! Not only
did I make it through my year long quest – I have gone far beyond where I
imagined I would, and can’t imagine every going back! You truly don’t know what you don’t know!!

As I studied and soaked up information, I’d make decisions
to test various philosophies to determine if they were true for me. For example, I read a lot about wheat and
gluten and their negative effects on the body.
I was tested a few years ago for celiac disease. It came back negative. But after reading so much about this, I
decided to eliminate all wheat, bread, pasta, crackers, etc.. from my
diet. I continued this for 2
months. After two months, I reintroduced
some whole grain pasta into my diet. The
negative results were immediate! I was
in pain! So clearly my body prefers to
abstain from those things.

The other major change that I made was to eliminate animal
products from my diet. The research is
overwhelming! Animal products are
killing us “BUT WHAT ABOUT PROTEIN?!?” I don’t believe our bodies need NEAR the amount
of protein that we hear about. But even
if we did, do you have any idea how much protein is in leafy greens? MORE THAN ENOUGH! I also eat nuts and seeds daily – but in
moderation.

I’m not perfect!
Every once in a while I’ll indulge in a little cheat. But my diet is now completely plant based,
free of sugar and processed foods, and 80% raw.
I feel great! This is no longer a
“diet” for me – it’s truly a lifestyle!

While the year has come to an end, and my QUEST has been
accomplished, I feel that I’m really
just beginning. I had so much fun on my
QUEST, I’ve decided to do it again. This
year, I’ll focus on fitness. I don’t
know exactly what that will look like yet – but I have decided it will include
a half marathon in April! (My son thinks
a marathon next October. We’ll see… J)

To those of you who have been a constant support for me this
year, THANK YOU! I think my children

They’ve joined me on this journey, along with my husband, and have
endured much! As a family, we now have
green smoothies every morning! They try
every new vegan recipe that I make, and generally find positive things to say

I'm amazed at the bounty my garden is producing already! In the last 3 days, we've harvested 10 or 12 zucchini! They are beautiful - and I'm so proud that the are growing in my yard!

<div style="font-family: Georgia,"Times New Roman",serif;">
At church yesterday, I was talking to a friend who is quite an accomplished backyard gardener and she told me about a way that she utilizes her abundance of zucchini. Beth makes a type of lasagna using thin slices of zucchini, layered with spaghetti noodles, tomatoes, garlic and lots of motz! Well, I don't currently do pasta, and will never do mozzarella. But the basic idea sounded delish! So I adapted! Fortunately, my wonderful husband surprised me late last week with the spiralizer I've been wanting. A spiralizer, by the way, reminds me of the little playdough toy that allows you to make hair. Basically, you just push your zucchini through this simple gadget and "noodles" come out the other end. SO FAST, SO EASY, SO CREATIVE & very cheap! (About $40 on Amazon)

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
*** You do not have to have a spiralizer to make this! The spiralizer makes the zucchini fun and appetizing, but you can just slice and layer your zucchini. OR if you do pasta, use pasta! (No need to cook it first! The zucchini and tomatoes produce plenty of moisture in this recipe. The noodles will cook while they bake). Of course, I wouldn't be able to sleep tonight if I didn't remind you that "white ain't right"!! Eat whole grain pasta!

<div style="font-family: Georgia,"Times New Roman",serif;">
Most importantly, NEVER FORGET - this is your kitchen, so you can do whatever you want! This is a basic template for you! Use what you have and what you love! There is no right or wrong!

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
Don't you just want to devour this!!

<div style="font-family: Georgia,"Times New Roman",serif;">

<div class="separator" style="clear: both; font-family: Georgia,"Times New Roman",serif; text-align: center;">

<div style="font-family: Georgia,"Times New Roman",serif;">
Ingredients:

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
4-5 zucchini

<div style="font-family: Georgia,"Times New Roman",serif;">
4-5 tomatoes

<div style="font-family: Georgia,"Times New Roman",serif;">
red onion - as much as you like!

<div style="font-family: Georgia,"Times New Roman",serif;">
Fresh basil

<div style="font-family: Georgia,"Times New Roman",serif;">
Parmesan Cheese (optional)

<div style="font-family: Georgia,"Times New Roman",serif;">
Mushrooms (I used portabello)

<div style="font-family: Georgia,"Times New Roman",serif;">
Pasta Sauce

<div style="font-family: Georgia,"Times New Roman",serif;">
Oregano (fresh or dried)

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
Process:

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
Pour a thin layer of pasta sauce in the bottom of the pan.

<div style="font-family: Georgia,"Times New Roman",serif;">
Using the spiralizer, process 4-5 zucchini. Place a layer of zucchini noodles over the pasta sauce.

<div style="font-family: Georgia,"Times New Roman",serif;">
Thinly slice tomatoes and layer over the noodles. Slice onions (I like long arcs!), and mushrooms and layer over tomatoes. Chop fresh garlic (as much as you like!) and sprinkle over top. Sprinkle with fresh basil and oregano. Add another layer of pasta sauce and repeat the whole process. Because I am basically vegan, I would only sprinkle a small amount of Parmesan over the top before baking. My family, on the other hand, LOVES cheese, so you can see by the photo that I kept them happy by sprinkling cheddar over 1/2 the casserole.

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
Bake at 350 for about 20 minutes. This recipe will produce a great deal of liquid! I just scooped the food right up out of the liquid and served it. When it was time to store the leftovers in the fridge, I poured the "juice" into a container. Afterall, it is loaded with nutrients! The next day I drank it like V-8 juice. Yum!! My family (even my mountain dew and Dorrito eating son) really enjoyed this recipe!

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">
IF YOU EAT A RAW DIET... this is just as awesome raw! As a raw dish, I skip the pasta sauce and instead, create my own fresh pasta sauce using just tomatoes, basil, oregano, garlic and a food processor. Cooking does remove a substantial portion of the nutrients of these wonderful veggies. Don't be afraid to try it raw sometime!

I have a great excuse, though! My first born graduated a couple of weeks ago. (I'm so proud of him!) But end of the year... graduation... grad party.... take a lot of time and energy! Thus... no post for a while.

I am happy to report, however, that I have not strayed from my QUEST! My self-education continues and I'm feeling so empowered to take control of my health!
To date, I have shed 40 pounds!

As I continue to research a plant based diet, I've encountered Dr. Douglas Graham and his 80/10/10 philosophy. He teaches that 80% of our diet should be carbs, primarily in the form of fruits and also some leafy greens. NO MORE than 10% should be fat. (By the way, on a 2000 calorie diet, 10% fat would be just 14 almonds!) NO MORE than 10% should be protein. While we're constantly being told to eat more protein, our bodies only need a certain amount. (About 6-7% of total calories, actually) Beyond that, our bodies don't know how to process the excess protein or what to do with it. This is a vegan, low fat, ALL RAW diet! It's not too far off from what I've been doing the past few months - so I've decided to give it a try for the summer; Memorial Day through Labor Day. I'm looking for some very specific changes/improvements to my health. I'll be sure to report the results and I continue through the summer!

BANANA PORRIDGE is an 80/10/10 recipe that I stumbled upon recently. It is so delicious and easy - and my family loves it too!
You'll need to make banana milk!
2 frozen bananas
1 cup of water (or so... add more to get a think milk consistency)
4-6 dates (soaked for 20 min first)
cinnamon to taste

Put all of these ingredients in a high speed blender and let it zip along until you have a thick, creamy milk consistency. The dates are optional - but I always have dates in my house, so I use them for extra sweetness!

Next...

Chop up bananas into small pieces (I used about 6 bananas to feed three people today)
Chop up any other fruit that you have. Today, I used fresh Michigan strawberries (because I bought 2 flats yesterday!), and some organic apricots that I needed to use up.
Mix all in a bowl and pour "milk" over it. Eat with a spoon like cereal. YUMMMMMMMY!!!

And now... I'm off to the beach with my kids! I'm taking Friday's off this summer and have declared every Friday BEACH FRIDAY! As a super exciting side note... my bathing suit from last year is HUGE! So, my 15 year old daughter gave me her bathing suit top from last year. She is a tiny, athletic little thing, so I'm feeling awesome that I can comfortably wear her top! Her bottoms will NEVER fit me! lol So for the time being, I've pinned mine.
Something easy, of course - as I'm not an accomplished chef! Far from it, in fact!! But something to change up my smoothie/salad routine. I started flipping through my Moosewood Cookbook and found just the thing!! GREEK PIZZA! It was delicious AND easy!

Here's the recipe:

Topping

1 15 oz can chickpeas, drained
3 T water
4 tsp lemon juice (or more to taste)
2 T olive oil
1/4 tsp salt
2 garlic cloves (or more!)
5 cups fresh spinach
1 cup mushrooms
1 cup fresh chopped tomatoes
1 jar (or can) artichoke hearts, well drained and chopped
1 tsp dried oregano
3/4 cup feta or asiago cheese (I used feta - and only about 1/2 cup)

Dough:
Anything you want! I used gluten free, wheat free rice tortillas. But you could use any crust you prefer.

In food processor, puree the chickpeas, water, lemon juice, 1 garlic clove, 1 T olive oil and salt. Add more lemon juice or salt to taste.

In a skillet on medium-high heat, cook the garlic and mushrooms in 1 T olive oil for just a moment, before adding spinach. Cook for a minute or two, until the spinach has just wilted and is still a beautiful bright green. Place in colander to drain.

Spritz a bit of olive oil on back of crust and place on pizza stone, or cookie sheet.

Spread the chickpea puree over the crust and top with spinach, tomatoes and artichoke hearts. Sprinkle with oregano, pepper and cheese. Bake in preheated oven for 10-15 minutes.

I found that this amount of ingredients made 3 tortilla sized pizzas. I could only eat one! It was very satisfying!! To me, the artichokes are what made it divine! They were perfect on this little pizza!! Give this recipe a try! I know you're going to love it!!

Keep in mind, this is YOUR pizza! You can make it any way you want! <div style="font-family: Georgia,"Times New Roman",serif;">I really should have taken a "before" photo of my pantry -- but I'm just not that smart. But THIS is the finished project!
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">My pantry has been a major source of frustration since we moved in to this house 12 years ago. The builder chose to use closet shelving instead of pantry shelving. What this means is that there is not a solid place for items to sit. They are constantly tipping and getting caught in the cracks. Finally, I took some time to make it better.
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">I started a couple of weeks ago with a major kitchen cupboard overhaul! It was at that time that I decided to start keeping things in bins (I have bins in my fridge and freezer, too!) This way, instead of constantly moving items around to see what's behind them - and causing a domino effect of items tumbling into the cracks of the non-solid shelving, I just pull a bin forward and I can see everything that is in it and quickly locate what I need. For my pantry project, I took it a step further. I have been buying a lot of bulk items lately. I decided to start scavenging for glass jars with tight fitting lids. (Trying to get away from chemically infused plastic containers) Just to make it cute (cause I DO like cute!), I decided to label my bulk jars and my bins with computer generated labels attached to fabric.
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;"> Those cute jars are sitting on 2x4 pieces of wood. You've probably seen those little plastic stair step canned good organizers for $12. Well, not only are those too small for my jars - they are also too expensive! So I went to Home Depot and purchased two - 84 inch long 2x4's and had them cut in thirds, for a total of 6 pieces. When I got home, I stacked three on top of each other and nailed them together. I slid them to the back row. I then took two more and nailed them together and made them my middle row. Finally, I placed the single piece in the front. (The front piece is currently unoccupied, as I need to gather more jars!) The total cost for my personalized jar-stair was $3.98. Seriously! I'm still planning to decorate the fronts of them with a sassy ribbon. :)
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">Also, I added the extra shelf pieces, found at Home Depot. There was way too much wasted vertical space between the installed shelves. These little additions were intended for sweaters! But the work great in my pantry! I'm really pleased with how the project turned out!
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">On another happy note, I assembled my new juicer this evening and made my first wonderful glass of fresh, organic, vitamin and mineral rich juice. YUM! I wish I had taken a picture of that too! But again... not that smart. Juicing is the best way to quickly and effectively deliver nutrients to your cells. Juicing separates the bulky fiber, allowing the nutrients to rapidly get to your cells. Of course, we NEED fiber in our diets as well! So I don't personally subscribe to the idea that juicing alone is the best plan - unless you are battling cancer or other disease. In that circumstance, I recommend looking into "The Gerson Mirracle". Dr. Gerson developed a holistic therapy in the 40's that was, and continues to be, an amazingly effective treatment for cancer and a myriad of other ailments and disease. If you or someone you love is suffering, I beg you to look into Dr. Gerson's work. I'm attaching a link to a free 90 minute documentary. WORTH YOUR TIME!!
<div style="font-family: Georgia,"Times New Roman",serif;">

<a href="http://www.snagfilms.com/films/title/the_gerson_miracle" style="font-family: Georgia,"Times New Roman",serif;">The Gerson Miracle
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">Because I am not suffering any type of disease (praise God!) I am using juicing as a preventative therapy! Sticking to a plant based diet, which is highly raw, will significantly reduce my chances of dealing with such things. As I type I'm sipping on my... 12th or so glass of water for the day - and nibbling on homemade organic red popcorn, popped in coconut oil and sprinkled with pink salt. Completely great for me and my all time favorite snack!!
<div style="font-family: Georgia,"Times New Roman",serif;">

<div style="font-family: Georgia,"Times New Roman",serif;">Ahhhh!!
Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com1tag:blogger.com,1999:blog-1155994893833212357.post-325294712905581632012-03-20T19:10:00.000-07:002012-03-20T19:10:32.747-07:00So much to learn, so little time!I think that this Quest has become a full blown obsession! I just can't get enough! It seems like I'd be on information overload, but I'm truly not!

Sophie was picking on me tonight while I was whipping up a new curry dip, made with sprouted lentils. She said "you're cooking a lot these days!" Must seem so foreign to her! lol!

As I mentioned previously, I've made the decision to go to a plant based diet. Other than free range eggs and organic yogurt, I'm avoiding animal products. It seems that every where I look (even when I'm not looking!) I'm stumbling onto information about the benefits of a plant based diet. However, my family is not there yet. But as a result of our research, they (Ryan) has decided that even though they don't want to give up meat, they are willing to start purchasing our meat directly from farmers. Grass fed cows, free range chickens, etc... This past Saturday I made my first organic chicken purchase. It was SO liberating! I left with my purchase feeling giddy! How silly is that?! Especially considering that the cost is significantly more. SO worth it to me!

Tonight I had dinner at Food Dance, downtown Kalamazoo. It is a wonderful organic restaurant. I went with a group of girlfriends and it was so.much.fun!!
Again, I felt such a feeling of victory as I left. Not only did I have a fabulous meal, I managed to avoid the bread that was on the table, and the decadent chocolate dessert that the girls split. To be honest, it wasn't even an issue of "avoiding" those things... I truly hardly noticed they were there. I was super satisfied with my meal, and we were having so much fun laughing and visiting that those foods were simply not an issue.

MY NEW JUICER ARRIVED TODAY!! And it was FREE! We used our bank points and cashed them in for a lovely juicer! I can't wait to try it out. Unsure of the benefits of juicing? GOOGLE IT! You'll be amazed!

My salad at lunch time was the bomb! (For some reason, my photo below keeps inserting sideways. No idea why! So tilt your head when you look at it!) I ran out of fresh spinach (boo!), but I had Kale & Collard Greens. These are very hearty greens, and a tad bitter eaten raw. But it's what I had, so I went with it. Instead of tearing the lettuce into bite size pieces, I stacked the leaves and rolled them up, then I sliced them - so I ended up with what looked like shredded greens. Really liked it that way! I added fresh tomatoes, red onion, green & orange pepper, shredded carrots and then my sprouts! Mung bean, broccoli (harvested just today!), quinoa & garbanzo (also harvested today!). I then drizzled my homemade olive oil- avocado dressing. I loved it! (See pix below). For dinner I made stuffed acorn squash and brussel sprouts. I made it for the whole family. I don't think any of them LOVED it like I did, but they were very sweet and finished it :) They're so supportive!
Here's the thing, the more I learn, the more I want to change what they're eating too. Cancer scares me - and I'm convinced that IT IS PREVENTABLE in most cases. I have personal experience with a precious kiddo who couldn't have prevented it. But research is clear that what we eat, and the way things are now processed and the chemicals used in our food is killing us! Heart disease is another scary but very real example! But I have a 42 year old husband, 17 year old son, 15 year old daughter & 12 year old son. I've participated in their addiction to SAD (standard american diet). I can't MAKE THEM CHANGE at this stage of the game. But in small doses, and through my example, hopefully some change will come.

So.. let's talk about discernment. I need more of it! And I'm praying daily for it. I am not a scientist, or a dietitian, or nutrition coach! So weeding through the many, many options, theories, and research (much of which is like a foreign language to me!) is tricky. So I'm not making any solid judgements yet - but I want to recommend a movie to you. Forks over Knives. I found it on hulu and amazon. It is a 90 minute documentary outlining some very significant studies on consuming animal products. It looks closely at the effects of consuming animal products vs consuming plant based foods. It was really good, and again, got me thinking and reeling!

I previously recommended a book called "Why We're Fat & What to do About it". This book concludes the opposite, in terms of fat and weight, stating that the fattiest meats will not make us fat - grains will. I can say with certainty that cutting out most grains has made a big difference in how my gut feels and my weight loss. So, maybe the meat won't make me fat - but could it still be increases my risk of serious disease? I think in order to make an educated decision, it's good and important to look at these issues from every angle, especially if I'm going to make life changes because of it! This study made sense to me. If you can find 90 minutes, please watch it! I'll look forward to hearing what your thoughts are!

Have a great day - Eat more veggies! :)Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com2tag:blogger.com,1999:blog-1155994893833212357.post-53545389009081838622012-03-01T16:41:00.001-08:002012-03-01T16:57:47.175-08:00Sprouting 101 - My video tutorial (plus a great salad recipe!)I don't have time to blog everyday! But I MUST share the delicious and SIMPLE salad that I made today.

I'm not sure if it was the avocado, or the avocado and dressing together, or the fact that I made it and drizzled the dressing at 7:00 am but didn't eat it until 1:00 (giving the flavors lots of time to blend)... but for me, it was a magical combination! In fact, it was sooooo good, that I came home from work and made another. Isn't it pretty!
So.. here's the recipe:

Strawberry Spinach Salad (see... you just know by the title it's going to be easy!)

1 1/2 (or so) Cups fresh spinach leaves, torn (organic if possible!)
1/2 cup fresh strawberries, halved (organic, if possible!)
2 or 3 T fresh red onion, diced
1/2 ripe avocado
scattering of freshly sprouted quinoa (don't quit because you don't have this!)

Dressing
2-3 T olive oil
1 T apple cider vinegar
pinch of sea salt

Honestly, I'm making up these dressing quantities because I just grabbed bowl and dumped a little of each. Shake or stir it vigorously. Drizzle on your salad.

I really can't begin to tell you how delicious this was!

OK - regarding the quinoa... I used it because I had it - which is really how all salads are born! This salad would not taste any different without the sprouted Quinoa. But is was SUPER nutritious with it!

Did you know that Quinoa is one the best staple foods for weight loss? It is very low in fat calories and contains high levels of fiber and proteins. One cup of cooked quinoa is less than 200 calories with only 3 grams of fat. What’s better is that almost all of the fat in quinoa is unsaturated and is beneficial for your health.

Quinoa is less starchy than wheat or rice. Its carbohydrate content consists mostly of complex carbohydrates and dietary fiber. Each cup of cooked quinoa can deliver more than 1/5 of your daily fiber needs.

Quinoa beats most other grains in terms of protein concentration. One cup of cooked quinoa gives you about 8 grams of protein. The further advantage is that the proteins in quinoa are made up of all varieties of essential amino acids, including lysine, which is not found in wheat or rice.

If you've never seen it, it looks somewhat like couscous. It has a very mild, if any flavor - which means you can put it in anything! If you choose to cook it, I've had the best success by boiling it for 20 minutes and letting it stand for another 5. Use it in place of rice, or in soups, on salads, etc... I've made many cold quinoa salads by adding peppers, tomatoes, onions....

In this recipe, I did not cook my quinoa - I sprouted it. (As noted in yesterdays blog!) Quinoa sprouts very quickly - about 48 hours.

Quinoa can be purchased anywhere these days, as it's quickly gaining notoriety! I've seen it at Meijer near the rice. It can also be purchased at any natural food store. It about triples in size when you sprout it. So, if you start with 1 cup of quinoa seeds, you will end up with about 3 cups (maybe a little less) sprouted quinoa. It doesn't get huge and fluffy..

Because so many people have private messaged me asking for more info about sprouting, I came home from work today and made my own little video tutorial. Please try not to get fixated on my muffin top, as I did when I previewed the video! It'll be hard.. but please try to focus on the message! :) There are two parts - because I ran out of storage midway through. So watch them in order.

Enjoy the video and GET SPROUTING!!
I am 4 1/2 months into this journey. I never imagined where it would lead me or how much I'd be enjoying it! My objective from the beginning was to gain knowledge about eating clean, whole foods. My thought was that I'd avoid growing bored if I learned about new things to eat & how to prepare them. Additionally, I hoped that if I knew more about what processed food was doing to my body, I'd be less likely to consume it.

October and November went great. December was.... well.... Let's not talk about December. January first, along with the rest of the world, I began again. It's been 8 weeks since I consumed ANY sugar or ANYTHING processed! I have jumped in completely and I'm loving the journey!

The more I read and learn, the more experimental I become. For example, I started with basic clean eating, which is whole foods! Lean meats, fruits and veggies, whole grains, etc.. Then I read a book that led me to try cutting out grains, including bread, crackers, rice, pasta... THAT made a huge difference immediately. The weight really started dropping then and I started feeling GREAT in my gut. SIDE NOTE.... I've always been very, (ah-hem.. gassy). Totally un-sexy. Since I cut out the grains my belly has felt GREAT! As I continued researching, I came upon info about sprouting. It is my total obsession this week! IT'S SO FUN!!! Over the weekend, I got totally lost in you-tube videos demonstrating sprouting. And the next day... and the next day... and when I'm done typing this, guess where I'm headed?
Guess who sprouts, by the way?? Raw vegan foodies! Naturally, I began checking out their websites and blogs. ( Did I mention that I am learning so much?!) Tonight for dinner I made a raw sprouted adzuki bean & quinoa chili. It packed some heat! WOA! No... I'm not saying I'm totally diving in to a raw vegan lifestyle - but I'm sure going eat more raw and keep investigating!

At last weigh in (February 4) I was down 18 lbs. It was about a week later that I began seeing and feeling noticeable differences in my clothes. I also did my measurements on the 4th and was down 11 inches overall. I decided at that time that I would not weigh or measure again until March 3rd. Today is February 29th - so just 3 more days.

So.. that's the update! Off to surf you-tube :)Molly Wieberhttp://www.blogger.com/profile/12780928581680089625noreply@blogger.com0
